Chinese Congee

INGREDIENTS

2 rice cups – Washed rice (washed and keep in fridge overnight for smoother texture)
16 rice cups – Water
1 thumb (15 mL) – Old ginger, sliced
4 tbsp (60 mL) – Seafood Stock
1 tbsp (15 mL) – Garlic, grated/ chopped
1 tsp (5 mL) – Salt
2 stalks – Green onions, thinly sliced
Dash of – Pepper powder
Dash of – Sesame oil
¼ cup (60 mL) – Shredded chicken (optional)

DIRECTIONS
  1. Wash 2 cups of rice thoroughly. Wash it the night before, drain the water and keep in the fridge overnight for smoother texture.
  2. Put the washed rice and 16 cups of water into the rice cooker. Add in the sliced ginger, grated garlic, salt and Seafood Stock in as well. Select the porridge function at the menu.
  3. Serve the congee in a bowl. Garnish the congee with green onion, pepper, sesame oil and shredded chicken.
